Emmentaler Switzerland AOC

“This ‘original Emmentaler’ has to be aged for a minimum of four months. It is produced in a round shape with a natural rind and aged in traditional cellars. The original Emmentaler exists with different age profiles: classic – four months, reserve – eight months, and Premier Cru – 14 months. It is produced with raw cow’s milk, adding only natural ingredients (water, salt, natural starter cultures and rennet). Preservatives or ingredients from genetically modified organisms are not allowed. Emmental AOC is still produced in small rural dairies.” Visit www.local.emmentaler.ch for more details.

Chestnut – Castanea Sativa

Chestnut, a tasty fruit inside their spiky capsule. The fruit can be peeled and eaten raw, but it can be somewhat astringent, especially if the pellicle is not removed. Another method of eating the fruit involves roasting, which does not require peeling. Roasting requires scoring the fruit beforehand to prevent undue expansion and “explosion” of the fruit. Once cooked, its texture is similar to that of a baked potato, with a delicate, sweet, and nutty flavour.
